I loooove chocolate. And these hit the spot when I am craving something fudge or brownie-like or just plain sweet. The only sugar they contain is from the dates, and most amazingly, they contain just three ingredients!
Ingredients:
1. Medjool dates (10-12 large ones ... make sure they are pitted!)
2. Walnuts or any nut of your choosing (note, it is often recommended to soak nuts first overnight or for several hours to neutralize anti-nutrients or enzyme inhibitors)
3. Dark chocolate (I use 85% at least and I use 1.5 large candy bar size)
Directions:
In a small blender, mix 10 dates (double check that they are pitted!) or so with about a cup of walnuts (or whatever nut you have chosen). Blend vigorously until you have consistency of a graham cracker crust.
Line the bottom of a round pie dish with the date / nut mixture. Pat it so it is even all around the pan.
Break the chocolate up into bits and melt in the microwave. Be careful not to burn your chocolate! It doesn't take too long to melt it. Pour the chocolate over the crust evenly. You can move the pan around to allow the chocolate coating to cover the entire pan evenly. If you'd like, you can top with some walnuts or just leave plain. In the above photo I did add extra walnuts. I don't always do this.
Put the pie pan in the freezer for 10-15 minutes. And that's it! Cut with a sharp knife and enjoy. Store covered in the refrigerator.
